Exact excerpt
In this study, comprehensive analytical methods were applied to characterise the liquid and sediment samples from the bronze vessel discovered in a Qin tomb (the later Warring States period) at Shanjiabao cemetery. The methods included ultrahigh performance liquid chromatography-triple quadrupole-time of flight tandem mass spectrometry (UPLC-Q-TOF-MS), FTIR, ultra-high performance liquid chromatography-quadrupole-electrostatic field orbitrap high resolution mass spectrometry (UPLC-QE-MS) and microfossil analysis, which enabled the identification of organic biomarkers and microfossil remains. The results revealed detailed flavour profiles, diagnostic organic acids, starches, phytoliths, and yeast, providing multiple lines of evidence to determine the ingredients and brewing processes of the ancient alcoholic beverage.
